Easy Broccoli Chicken Alfredo Recipe

Healthy doesn’t have the be Difficult, or Expensive!

In order to live a healthy lifestyle I need things to be easy, quick and affordable. This Easy Broccoli Chicken Alfredo recipe fits all of these things! Perfect for meal prep and also a last minute easy meal. I always keep a jar of Alfredo in my pantry for this meal!


It can be even easier with precooked frozen chicken or using a rotisserie chicken! I also always keep frozen broccoli in my freezer. Having frozen vegetables on hand at all times helps me to live a healthy lifestyle.

Top over pasta, pasta substitute, rice, or enjoy alone!

This Broccoli Chicken Alfredo recipe is great all on its own. But, we love adding it on top of some cooked pasta! This meal is so easy its fun for the little ones to help with too! (Just obviously be careful of the hot oil!) Once all the heat is turned off I will have Amelia help me plate it. This gets her excited to eat it, since she helped! If you like a little kick with it, try topping with red peppers. Parmesan cheese or a little bit of mozzarella is always a great idea!
The big question is how often are you going to make this meal? We do the same thing with traditional red pasta sauce and the cubed chicken as well. Cooking the chicken in cubes just goes so much faster, and on weeknights especially, I need things to cook quickly!

Easy Broccoli Chicken Alfredo

This recipe is a perfect weeknight meal! Delicious, hides in veggies, and so fast! It's also gluten free, keto and low carb! All you need is some chicken (rotisserie works great too), a jar of Alfredo sauce and frozen broccoli!

Equipment

  • Electric Skillet or Large Pan like a cast iron

Ingredients
  

  • 1 Tablespoon Avocado Oil
  • 1 pound Chicken Breast (or rotisserie chicken)
  • 1 Tablespoon Montreal Chicken Seasoning or another all purpose seasoning!
  • 8 oz (half a jar) Alfredo Sauce I used Ragu
  • 16 oz (1 package) Frozen Broccoli (steamed) I get at Sam's or Costco!
  • Pasta or Pasta Substitute

Instructions
 

  • Boil water for pasta if making traditional pasta.
  • Heat up oil in a pan. (I use an electric skillet) Cube the chicken into 1 in cubes.
  • Add the chicken to the hot oil. Sprinkle on the Montreal Chicken Seasoning!
  • Microwave the broccoli according to directions on package (about 5-8 minutes). Crisp the chicken in the oil until 165 degrees (about 10-15 minutes).
  • Start cooking the pasta if having traditional pasta. If having pasta substitute just warm the noodles in a pan with Italian seasoning (optional).
  • Add the steamed broccoli to the chicken. Stir to combine.
  • Add the Alfredo sauce to the broccoli/chicken!
  • Drain and plate pasta if using!
  • Put the mixture over prepared pasta or enjoy alone!
