New Joe’s Special
Over the years, my family has made our own twist on the recipe! Here's our take on the San Francisco classic for your family to enjoy as well!
Equipment
- Large Pan / Electric Skillet
- Mixing Bowl
Ingredients
- 14 oz fresh or frozen spinach
- 6 Eggs
- 1 lb Ground beef
- 4 tsp Minced garlic
- 1 Small onion, diced
- 2 tsp Dried oregano
- 2 tsp Italian seasoning
- 2 tsp Nutmeg
- 2 tbsp butter
- hot sauce
- ketchup
- Parmesan cheese
- Salt and pepper to taste
Instructions
- Crack and scramble eggs in a medium sized bowl. Optional: add hot sauce into the scrambled egg mixture.
- Sauté frozen spinach in pan/skillet. Once wilted, remove and put in the bowl of scrambled eggs.
- Melt butter in the pan/skillet. Brown ground turkey and onions until the onions are translucent and the turkey is no longer pink.
- Add seasonings, spinach, and eggs once the ground turkey is browned.
- Add spinach and eggs to the skillet
- Combine and cook for 3-5 minutes or until the eggs are scrambled through.
- Top with Parmesan cheese and Ketchup!
Notes
Joe’s Special is traditionally served over toast. Feel free to add to your plate and enjoy!
