You won’t be able to stop making these! Easy, nutritious, and great to make ahead of time! As soon as my mother-in-law pulled these out of the fridge (already prepped) and I knew they would become a staple in our busy morning routine! I eat these with one hand while I hold my baby!

These are a great base-get creative! We add spinach and cheese before we crack the egg too! We sometimes top with salsa, sour cream, and guacamole! The whole family can easily customize!

Family connection: This recipe is so easy that kids can make it! My 3 year old daughter makes it almost by herself each week! This makes her want to eat them because she takes ownership. Can also be a great math lesson with determining the ratio of egg to Canadian bacon and practicing multiplication and division.

For younger kids: practice counting the eggs and Canadian bacon as they put them into the cups. My daughter loves that she can make a basket out of food! Talk about the property difference of the egg before and after it is cooked (science).

We prep on Sundays to have an easy and healthy breakfast that we just reheat throughout the week! Top with guacamole, salsa, cheese, sour cream, or simply enjoy plain!

Ingredients
  

  • 12 Eggs
  • 24 pieces Canadian Bacon You can also use 12 pieces if you want to do 1 Canadian bacon per cup
  • Salt and Pepper
  • Olive Oil Spray
  • Spinach optional
  • Salsa optional
  • Sour cream optional
  • Guacamole optional

Instructions
 

  • Preheat oven to 350. Spray muffin tin with cooking spray.
  • Place two Canadian bacon pieces in the muffin tin, overlapping. Add cheese, spinach, etc if desired.
  • Crack egg into the Canadian bacon and sprinkle with salt and pepper.
  • Bake for 15-20 minutes depending on desired doneness of egg.
  • Optional: Top with salsa, sour cream, and/or guacamole!
  • Enjoy!
