Easy Mexican Cauliflower Rice

The possibilities are endless with this perfectly simple side. Add some ground beef or red bell peppers in! Add it to a breakfast scramble. Let your imagination soar!

Ingredients
  

  • 1 cup Mexican cheese blend
  • 1/3 white onion
  • 12 oz bag of frozen Caulirice (3 1/4 cup)
  • 2 tbsp heavy whipping cream
  • 1 tbsp dried cilantro leaves

Instructions
 

  • Melt the butter in a medium sized pan over medium heat.
  • Saute the onions for about 5 minutes until they are translucent.
  • Add the cauliflower rice. Then sprinkle the cilantro leaves. Stir occasionally until tender about 15 minutes.
  • Remove the cauliflower rice from the heat. Add the heavy cream and cheese and stir to combine.
  • Salt and pepper to taste. Serve and enjoy!
