Dave’s Low Carb Breakfast Sandwich

Dave’s Low Carb Breakfast Sandwich

This is a family favorite my dad (Dave) has been making for as long as I've been alive! Every Sunday morning, holiday, or special event he would make us these "Breakfast bagels" (what we called them). Hope this can become a new family favorite of yours!
Now that our family is eating low carb, I wanted to update this recipe with the egg/cheese waffle that we enjoy it with now (recipe will be posted soon)! For those who do not eat low carb, you can enjoy with a bagel or bread!

Equipment

  • Microwave
  • Round glass (or plastic) container

Ingredients
  

  • 2 eggs
  • 1 pinch salt
  • 1 pinch pepper
  • cooking spray
  • 1 oz Sliced sharp cheddar cheese
  • 1 piece Bacon, sausage, or Canadian bacon
  • 2 Egg and Cheese waffles

Instructions
 

Egg puff

  • Spray the glass or plastic container with cooking spray. Mix in salt and pepper. Crack two eggs into the container and scramble with a fork.
  • Microwave the egg for 45 seconds. The egg should still be a bit undercooked. This is expected. You cannot cook the egg in one cycle.
  • Let the egg rest about 15 Seconds
  • Microwave again for 30 seconds. The Egg should rise and be fully cooked.

Make the Sandwich

  • Before the egg cools, place egg on one of the Egg/cheese waffles. Immediately place the sliced cheddar cheese on the egg and let it melt.
  • Add one to two slices of bacon on top of the melted cheese.
  • Top the sandwich with the other waffle.
  • Enjoy!
